The Spigarolino, or Strolghino culatello, is the first salami of the season; made using very lean meat of salted pork, freshly ground, finer than normal, and it is flavored with the classic Bassa Parmense curing.

To accelerate as much as possible the maturation is stuffed into small and thin guts called in dialect "filsola" (small strip) and it is ready to cut after 15-20 days of preparation.

Tasty as the biggest cuts salami, it’s delicious as all the firstfruits.
